COFFEE BEAN-SHAPED COOKIES

Servings: 26 cookies

Cooking time: 35 minutes + 2 hours (to let the dough rest in the refrigerator)

INGREDIENTS:

  •          250 g (2 cups) white flour
  •  
  •         120 g (3/4 cup) butter
  •  
  •         100 g (4/5 cup) powdered sugar
  •  
  •         2 egg yolks
  •  
  •         2 tablespoons milk (30 ml)
  •  
  •         1 tablespoon instant coffee (15 ml)
  •  
  •         1 teaspoon cocoa powder (5 g)
  •  
  •         1 teaspoon baking powder (5 g)

If you don’t want to add sugar to it then you can add 80 drops of liquid stevia or 20 drops of vanilla extract.

Preparation

Step 1: Leave the butter to melt at room temperature for about half an hour.

Step 2: Mix butter and powdered sugar until you make a smooth dough.

Step 3: Add the egg yolks and continue stirring.

Step 4: Add freshly roasted coffee beans or instant coffee and cocoa powder and mix them well together.

Step 5: Add the flour, baking powder, and milk to the mixture start kneading it, and let it rest for about 2 hours in the refrigerator.

Step 6: After leaving it for 2 hours, make small balls from the dough and give it a shape like real coffee beans. Use a roasting pan along with baking paper to save the baking tray.

Step 7: Bake the cookies for 15 minutes at 180°C (350°F) or until done.

You can add chocolate chips to it to make Coffee bean chocolate chip cookies.

Coffee Cookies

Coffee cookies are loved and consumed in Italian breakfast but are available any time of the day. You can make variations of it by adding chocolate chips and nuts to them.
